Skinny Squash Patties
¼ cup self-rising flour and 1/3 cup of (yellow or white) self-rising cornmeal
3 cups finely grated yellow squash
½ cup grated carrot
½ teaspoon fresh ground pepper
4 chopped green onions
¼ cup finely diced jalapeno peppers (seeds and ribs removed)
1 tablespoon grated fresh ginger
2 egg whites beaten
Yellow Squash Recipes:
Press the squash into a colander or sieve to remove most of the water.
Mix all of the ingredients together in a medium sized bowl.
Add a non-stick spray or 2 tablespoons of Extra Virgin Olive Oil to a cast iron frying pan.
Adjust heat to a medium setting.
Create small, flat patties about 2-3 inches in diameter and brown them on both sides.
Place the patties on a paper towel when they are done.
Remove the patties and arrange on a serving tray.
**Top with some fresh chopped dill or parsley.
