Yellow Squash Recipes

Incredibly appealing yellow squash recipes for delicious low fat,low calorie diet.

During the summer season both home cooks and professional chefs enjoy the versatility of using fresh, green or yellow squash. Of all the different types of vegetables these are especially productive, easy to grow and very simple to prepare.

No matter whether you are using this veggie freshly diced in a salad, pureed into a hearty soup, steamed, grilled or sautéed- you will certainly be able to appreciate the appeal of a full flavor vegetable that features both low- fat and low calorie appeal.

When cooking summer squash you should select tender, fresh specimens. The straight-neck or crookneck varieties can be used when they are only 3-4 inches long, although even those that are 6-8 inches can still be used in most of your recipes.

As these vegetables mature the outer skin and seeds will begin to toughen and harden. Even the interior flesh will become more fibrous and lose some of that delightfully fresh flavor.

These prolific veggies are able to be used in many different recipes including sauces and breads. This versatile nature is due in large part to the delicate flavor that can be blended with a wide variety of ingredients.

Chives, shallots, rosemary, dill, thyme, garlic, basil, onions and celery seeds are just a few of the fresh seasonings that you can add as a flavor enhancement. These spices and natural herbs are able to bring out the best features of zucchini, patty-pan or yellow squash.

Those popular patties that are deep fried until crisp are a summertime treat. With a few tweaks of the ingredients you can enjoy a low-fat version of this classic side dish.
