This recipe serves 6 and is a nice change from jello and other low fat desserts.

Ingredients:

2 ¾ cup skim milk *

3 Tablespoons quick cooking tapioca *

½ cup granulated sugar ( for those wanting to cut calories as well as fat you can use ¼ cup sugar and ¼ cup sugar substitute.) *

2 egg whites beaten *

1 teaspoon vanilla extract

Low Fat Low Sugar Tapioca Pudding Recipe:

Directions:

In a large sauce pan combine milk, tapioca, sugar and egg whites. Let stand 5 minutes. Then cook over medium heat whisking the mixture until it comes to a full boil. Remove from heat and stir in vanilla. Let pudding cool for 15 or 20 minutes and then spoon into serving dishes. Cover dishes and refrigerator until ready to serve.

Serves 6

Note: The pudding will be thin at first. It thickens as it cools.

This pudding can be served by itself or is also good when served with fresh pineapple or melon chunks.

You can layer this dessert with blueberries or strawberry slices to make a parfait to add a chic look to your dessert table. It may also be served with low fat cookies or cake to make a more filling dessert.
