Sugar Free Strawberry Snack: Creamy Strawberry Coconut Popsicles

While many people consider popsicles a summertime snack, like ice cream they are good almost any time of the year and often hit the spot for people who are having those sweet cravings. While there are many different brands of popsicles sold on the market most are either loaded with sugar or sugar substitutes. You can purchase those made with real fruit but, they are often quite expensive. Making your own creamy strawberry snack popsicles can be fun and will give you the sweet taste of fruit with no added sugar. Enjoying a creamy strawberry Popsicle is a lot like eating ice cream on a stick and this recipe gives you the added taste of coconut to make this one deliciously sweet and satisfying snack.

Creamy Strawberry Coconut Popsicle's

Ingredients:

1 ½ cup strawberries cleaned and sliced

¼ cup coconut milk

¼ cup low fat milk (1% )

water as needed or desired

Directions

Using a blender puree strawberries, add in the coconut milk and the low fat milk and combine. For thinner popsicles add water until mixture is the desired consistency. Pour into popcicle cups (trays) insert popsicle sticks and freeze. Serve frozen as an afternoon or before bedtime snack.

Variations of the strawberry coconut popsicles

To make a more tropical creamy popsicle use 2/3 cups strawberries and 2/3 cup crushed pineapple drained and replace the additional water with drained pineapple juice. You can also use blueberries, blackberries, or kiwis in this recipe or replace the water with apple juice. Each variation you make will add a new taste and bring to mind even more possibilities.

You can also add a large banana to the creamy strawberry coconut popsicle and a bit of water. This will result in making one or two additional popsicles and a great taste.

Popsicles are one of life's simple pleasures and by using naturally sweet fruit you don't need to add sugar. These sugar free strawberry snacks will be loved by children and adults alike and are far healthier for your family than most "store bought" snacks.
