Incredible sugar free strawberry pudding recipe for a quick dessert with low fat ingredients.Pudding makes a nice light sweet tasting snack for children and adults alike. Since this recipe calls for fresh strawberries it is important to choose those strawberries with care. Keep in mind that unlike some fruit that continue to ripen after they are picked strawberries do not so, if you bring home that carton of half green strawberries then you are going to enjoy a lot of bitter with the sweet. When choosing fresh strawberries look for the firmest, plumpest, berries you can find. Make sure that they are a deep red color and none of the berries are molded.

Easy Sugar Free Strawberry Pudding:


2 boxes of Sugar Free vanilla pudding

2 cups purred strawberries

½ cup low fat milk (you may need to add more milk a few drops at a time if pudding is to thick.

¼ teaspoon stevia powder

mint leaves

Sugar Free Strawberry Pudding:


Clean berries and remove tops, puree in blender with ¼ teaspoon or less of stevia (start with 1/8). Then add to dry pudding mix with milk and mix until desired thickness. Spoon or pour into dessert glasses and refrigerate before serving. Top with mint leaves and serve.

This makes a great pudding for holiday celebrations. Here are a few ideas you may want to use.

For fourth of July cut the ingredients in half and replace 1 cup of strawberries with 1 cup of blueberry puree. (made the same way) layer with no sugar, low fat whipped cream Or vanilla pudding between the layers of blueberry and strawberry for an independence day dessert.

For Christmas use as is and top with a swirl of low fat, no sugar whipped topping sprinkled with sugar less candy crushed candy canes and then top the whipped cream with the mint leaf.

You can also use this pudding to make Strawberry Pudding pie and then decorate the top of the pie with slices of fresh strawberries.

Due to the pinkish/red color of this Strawberry Pudding it can add a bit of color with any meal and it looks beautiful on any table. It is just sweet enough to satisfy most peoples sweet tooth and makes for a great afternoon or bedtime snack as it is not overly filling.

If fresh strawberries are out of season in your area this pudding can be made with unsweetened frozen strawberries but, you need to watch the amount of juice that frozen strawberries may render when pureed. It is best to drain the juice off the thawed strawberries and then add back in the amount you think you need if the pureed strawberries do not seem juicy enough.
