Sugar Free Pecan Treat

Chocolate covered nuts are a taste tempting treat that most people enjoy from time to time. However, if you need to watch those blood sugar levels chocolate covered nuts may seem to be out of the question. However, with sugar free chocolate chips and a couple of cups of pecan halves, those chocolate covered nuts may be one way to get that sweet chocolatey pecan treat that you crave. Chocolate covered pecans only take 30 minutes or so to make and can be enjoyed as a treat or used to top cakes, pies or other desserts. They can also be added in to that homemade trail mix to give an unexpected sweet pick me up.

Chocolate Covered Pecan Treats


・ 2 cups of pecan halves

・ ½ cup semi-sweet sugar free chocolate chips

・ 3 tablespoons low fat evaporated milk


Line a cookie sheet with wax paper. Place chocolate chips and evaporated milk in a metal mixing bowl and then set the mixing bowl inside a pan of boiling water. Stir chips continuously until melted and smooth making sure no water gets into the chocolate. Then remove from heat and mix in pecan halves making sure they are well covered with chocolate.

Remove pecan halves from chocolate a few at a time using a slotted spoon. Separate each half and lay on wax paper. Refrigerate for about 10 minutes to allow the chocolate to set.

Chocolate covered pecans can be enjoyed by themselves or used to top cupcakes or decorate cookies. The chewy goodness of the nuts combined with the sweet chocolate tastes makes this a favorite snack for both young and old. They also make great food gifts for holiday giving for teachers and even friends.

For Holiday Gift Giving

Purchase some holiday themed scrapbook paper and cut in half. Form a cone from the paper and glue. Trim the top, add some ribbon so the cone can be hung up and fill with with chocolate covered pecans. Place plastic wrap over the pecans and tuck down the sides of the cone to keep the pecans from falling out and present as a gift.

You can also make your own plastic treat bags for giving your chocolate covered pecans simply by using small zip lock bags, cutting scrap book paper to fold over the top of the zip lock bag, stapling it in place. Trim the paper with ribbon and jingle bells, add a name card and you have a personalized gift bag befitting of these tasty treats.
