Sugar Free Pecan Muffin

Wonderful sugar free pecan muffin with cranberries,pineapple and nutmeg make a great low fat treat.With the holidays right around the corner most people’s thought turn to the wonderful holiday meals with all the fixings. But, no holiday meal is complete without those delectable muffins that replace bread on the holiday table.

Cranberry muffins are a favorite at this time of the year and there is nothing so delicious as a cranberry, pineapple pecan muffin with that holiday dinner. Of course these muffins make a great breakfast any time of the year and best of all they are sugar free so even those of you who are watching your blood sugar levels can enjoy these wonderful and tasty muffins.

Sugar Free Pecan Muffin:

Cranberry, Pineapple, Pecan, Muffins


・ ½ cup dried cranberries

・ ½ cup pecans

・ 1 and 2/3 cups crushed pineapple drained

・ ½ cup fat free vanilla yogurt

・ 14 teaspoons fruit sweet

・ 2 eggs

・ 1 teaspoon vanilla extract

・ 2 ¾ cup flour

・ 1 teaspoon baking soda

・ 1 teaspoon baking powder

・ 1 teaspoon cinnamon

・ ½ teaspoon nutmeg

Sugar Free Pecan Muffin:


Preheat oven to 375 degrees Fahrenheit. Line muffin tray with cupcake papers or lightly spray with cooking spray. Spread pecans into a small shallow baking pan and lightly toast them for approximately 8-10 minutes. Allow to cool and coarsely chop nuts.

Place the yogurt, fruit sweet, eggs, and vanilla into a bowl and whisk gently until well blended. In another mixing bowl combine the flour, baking soda, baking powder, cinnamon and nutmeg and combine together well. Stir wet and dry ingredients together mixing thoroughly. Add in fruit and nuts gently folding them in.

Fill muffin cups about 2/3 full with muffin mix. Bake for 25-30 minutes or until toothpick inserted in the center comes out clean. Allow muffins to cool in the pan for a few minutes before removing them to a wire rack to continue cooling.

Makes 8 to 10 muffins.

Serve warm for breakfast or make up a day ahead of time to serve for a dinner meal or lunch.

Cranberry, pineapple, pecan muffins are wonderfully moist and delicious and are great with with hot chocolate, your morning coffee or a large glass of milk.
