Sugar Free Lime Recipe: Sugar Free Lime Jello Salad
1- 3 ounce package of sugar free lime jello
1 cup boiling water
½ cup light mayonnaise
1 cup low fat cream cheese
1 celery stalk chopped
½ small carrot grated
2/3 cups crushed pineapple undrained
¼ cup walnuts roughly chopped
1/3 cup low fat milk
Sugar Free Lime Recipe:
Mix jello with boiling water until completely dissolved and allow to cool to room temperature. In a large bowl mix cream cheese and mayonnaise until smooth, add in milk and mix again. Add jello to cream cheese mixture and whisk to blend.
Add in celery, carrot, pineapple and walnuts and whisk again mixing well. Pour mixture into a glass baking dish and allow to set for several hours or overnight.
When ready to serve, cut salad into squares and serve on small salad plates atop a leaf of lettuce.
One of the nice things about this recipe is that it combines a number of different tastes and textures each one complimenting the other. The walnuts add a nice nutty flavor to this salad and the lime adds a refreshing twist.
