• 2 small boxes of sugar free cherry gelatin

• 2 cups of boiling water

• 1 can crushed pineapple and juice

• 2 small apples diced

• 1 can of no sugar added cherry pie filling

• whipped topping (no sugar)

• maraschino cherries

• sprigs of mint

In a large mixing bowl mix packages of jello and boiling water. Make sure jello is completely dissolved. Add pineapple, apple, and cherry pie filling, Pour into a 9 X 13 inch glass baking dish and refrigerate until set.

When ready to serve cut into squares and serve on a lettuce leaf on a desert plate, top with a dab of sugarless whipped topping and a maraschino cherry and sprig of mint.
