3 cups water

2 packets of Truvia or SweetLeaf (stevia-based sweetener)

2 eggs

2 cups chopped cherries (you may need to chop them up yourself)

2 cups all-purpose flour

1 ½ teaspoons ground cinnamon

1 cup chopped walnuts

1 teaspoon baking soda

1 teaspoon vanilla extract

¾ cup vegetable oil

½ teaspoon salt

½ teaspoon ground nutmeg

Directions for Baking the Cake

Preheat to oven to 350º F (175º C).

While the oven heats up to the desired temperature, grease the bottom of and then place flower in one 10'' tube or bundt cake pan.

In a saucepan, combine the cherries with the water and cook until the water has been absorbed. Then, put the saucepan aside to let it cool.

While the saucepan cools, combine the vegetable oil, eggs, vanilla, and sweetener and mix well. Sift the flour, salt, baking soda, ground nutmeg, and ground cinnamon into the egg mixture. Stir together. Next, combine in the cherries and chopped nuts.

Pour the batter into the prepared pan.

Bake for one hour.
