No Sugar, No Bake Blueberry Cheesecake

Ingredients:

・ 1-.6 ounce package of sugar free lemon jello

・ 1 cup boiling water

・ 1-8 ounce package of low fat cream cheese softened

・ 2 teaspoons of vanilla extract

・ 1 cup sugar free, low fat whipped topping

・ 1 to ½ cups sugar free blueberry preserves

・ ½ cup fresh blueberries

・ 1- 9 inch no sugar graham cracker crust

Directions:

In a small mixing bowl dissolve gelatin in a cup of boiling water. Let cool until thickened but, not set.

In another mixing bowl combine cream cheese and vanilla mixing until well blended and smooth. Blend in thickened jello and then fold in whipped topping. Add ½ cup blueberries and fold them in gently. Refrigerate overnight.

When serving cut small wedges of cheesecake and top with blueberry preserves. One pie should serve about 9 or 10 people.
