Shrimp Stir Fry Recipe:
Shrimp, Broccoli, And Cucumber Stir fry
This entire recipe takes about 20 minutes to prepare from start to finish.
* 3 tablespoons olive oil
* 1 ½ cups frozen broccoli cut into bite size pieces
* 1 cucumber peeled sliced in half the seeds scraped out and then diced into ½ inch pieces (the easiest way to do this is simply to cut each half into half again and then cut.)
* 1 red pepper cut into strips
* 1 clove of garlic dices
* ¼ cup cashew halves
* ½ small onion cut into strips
* 1 pound fresh or frozen shrimp peeled and deveined.
* Salt and pepper to taste (for those wishing to cut out sodium try using ½ teaspoon cumin in place of the salt.)
Shrimp Stir Fry Recipe:
In wok or large fry pan place 1 Tablespoon of the olive oil heat until the oil is hot. Put in shrimp and cook until the blue lines in the shrimp turn a bright pink color and the shrimp is heated through. Remove shrimp to a plate.
Pour in the rest of the olive oil and add the rest of the ingredients except for the cashews. Cook stirring continuously until all the vegetables are tender, add in cashews and shrimp and mix well making sure everything is warmed through. Add Salt and Pepper to taste.
Serve by itself or over rice or Chinese noodles. Makes 4 servings.
If you wish to have a sauce with this stir fry try ½ cup chicken broth heated and then and then add cornstarch mixed with a little water to thicken and 1 ½ teaspoons of low sodium soy sauce.
If someone in your family is allergic to nuts simply leave the cashews out of this recipe. They only add a little texture to the dish and are not a main ingredient.
