Shepards Pie Recipe
Mouth watering low fat shepards pie recipe with hearty rich ingredients.To many gourmet cooks a Shepards Pie is a delicacy that they associate with England or Ireland. In fact this dish is still enjoyed by many British and Irish families although a true shepherd's pie is considered to be a variation of the original ‘cottage pie' that dates back to the 18th century.
Quite typical of the era, cooks were interested in creating savory food with whatever ingredients were affordable, and readily available. With cottage pies it was possible to prepare a very hearty, and filling, main course with little more than a bit of roasted meat and some potatoes.
In the late 19th century the term Shepards Pie began to emerge, and it was traditionally made with lamb or mutton. Hence, we have the reference to ‘Shepherd' in the recipe's name. This baked dish was a clear change from the cottage pies that were generally made with beef.
Similar recipes can be found all over the world including "Kibbet Batata" in the Middle East; pastelon de papa created by cooks living in the Dominican Republic; and a baked potato pudding that is served in Russia. Given the fact that this is truly a ‘meat and potatoes' entrée, there is little wonder that this type of meat pie has remained so popular. It has many positive characteristics; this hearty pie is savory, simple to make, flavorful, affordable and lends itself to many different interpretations.
Shepards Pie Recipe:
3 pounds peeled and diced potatoes
1 ½ tablespoons of olive oil
Dash of Worcestershire sauce
Shepards Pie Recipe Low Fat Healthy Ingredients:
3 tablespoons low fat, or fat-free sour cream
1 large onion, diced roughly
2 1/2 cups low fat chicken broth-can use vegetable broth
1 1/2 pounds minced, or ground lamb
1 ½ teaspoons paprika
½ teaspoon ground cinnamon
½ teaspoon freshly grated ginger
2 chopped carrots
1 tablespoon butter
3tablespoons all-purpose flour
1 cup low fat beef broth or vegetable broth
1 cup (fresh, or frozen) green peas
***salt and pepper to taste
Shepards Pie Recipe:
Boil potatoes in 2 cups of low fat chicken broth for 10-15 minutes.
Drain the potatoes in a colander
Add the potatoes, sour cream and egg yolk to a mixing bowl and beat until smooth
If the mixture is too thick you can add ¼-1/3 cup of fat-free milk.
Set this bowl aside and heat the olive oil in a skillet.
Add the ground lamb to the skillet and brown over medium heat for about 5-6 minutes.
Season the lamb with cinnamon, ginger, salt and pepper.
Drain any pan drippings and then add the onion and carrots to the skillet. (Only add the peas if they are fresh from the garden)
Shepards Pie Recipe:
Continue cooking for another 5-6 minutes.
Use a sauté pan to brown the butter- add the flour and cook on medium heat setting for 3 minutes.
Add the beef broth, remaining ½ cup of chicken or veggie broth and a dash of Worcestershire to the pan. Adjust heat to low and cook for another 2 minutes.
Add the contents of the sauté pan to the larger pan containing the lamb, onion and carrots.
Add the peas. (If using fresh peas, remember that they should be added with the carrots and onion).
Transfer this mixture to a baking dish. It is better to use a smaller baking dish so that you can pile the meat and vegetable dish fairly high. Even a pie plate will be satisfactory.
Now cover with the potato mixture.
Sprinkle the paprika over the potato topping.
Place the pan in the oven and use the broiler setting to brown the potato crust.
Remove from oven and this delicious main-dish pie is ready to be served and enjoyed.
