For instance you can use fat-free milk or reduced fat sour cream instead of their richer counterparts. Splenda is a sugar substitute that can be used for many types of cooking and baking. In fact you can even use a cup of Splenda instead of the sugar that is listed among the ingredients in this rhubarb pie recipe.

If you should decide to use the sugar to make this rhubarb pie it will still result in a relatively low fat dish. A slice of this pie yields fewer than 300 calories with only 9 grams of fat.

Rhubarb Pie Recipes:

Necessary Ingredients

3 3/4 cups of diced rhubarb

1 cup sliced strawberries

1/2 teaspoon of ground cinnamon

¼ teaspoon of ground nutmeg

1 1/2 cups white sugar or 1 cup Splenda

1 teaspoon of vanilla flavoring

6 tablespoons of pastry flour; or you can substitute all-purpose flour

**1 tablespoon butter if desired

1 prepared crusts for a 9 inch single crust pie (for a lower fat option use one of our recipes to help create your own low-fat pie crust)

Cooking Directions

Preheat kitchen oven for 450F

Stir the sugar (or Splenda) together with the cinnamon, flour and nutmeg.

Sprinkle 1/3 of this mixture over pastry crust that is already in the pie plate.

Mix the berries, vanilla flavoring and rhubarb in a bowl.

Add strawberries and rhubarb to your pie crust.

Sprinkle the top of the fruit mixture with remaining sugar and flour.

If using butter you can add small dollops across the fruit mixture.

Place pie on the lower rack of your oven.

Let the pie bake at 450 for 12-15 minutes.

Lower the temperature setting to 325 and allow the pie to bake for another 50-70 minutes.

Garnish with chopped lemon or apple mint leaves and serve.

Important Tips to Remember

You can create a double crust pie but for a low fat recipe you should stick to a single crust version.

Spices can always be adjusted to suit your palate.

Strawberries add sweet flavor as well as healthy fiber and antioxidants to this dessert.

The omission of the butter will not have a dramatic effect on the taste and texture of the pie. By eliminating the tablespoon of butter you will also be trimming some of the fat and calories.

Follow the directions as listed above. The reason that you mix the sugar and the flour separately from the rhubarb is to help with the natural caramelizing process. When you add the sugar/flour mixture as directed it will produce a crisper, lighter texture for the finished dessert.
