No Bake Pumpkin and Cream Cheese Pie Filling
Pumpkin Pie Filling Recipe:
1 cup canned or fresh pumpkin puree
1-8 ounce low fat cream cheese softened
½ cup sugar or sugar substitute
4 ounces of frozen whipped topping thawed
1 teaspoon cinnamon
1/2 teaspoon ginger
¼ teaspoon nutmeg
Pumpkin Pie Filling Recipe:
In a large mixing bowl combine pumpkin and low fat cream cheese. Using a mixture on medium high blend these two ingredients until smooth and no white spots are left showing. Add sugar or sugar substitute and spices and blend until thoroughly mixed. Gentle fold in whipped topping until blended.
Once the filling is complete you can then pour it into a reduced fat graham cracker crust, make a parfait using crushed graham crackers or low fat shortbread cookies combined with finely chopped walnuts or almonds, or spoon into a dessert dish as is.
Refrigerator for at least two hours before serving and you will have a light flavorful pumpkin dessert that is perfect for that hot summer weather.
One of the nice things about this cool pumpkin filling is that you can buy those individual graham cracker crusts and make tiny pies for that church supper or bizarre or that community cookout. Making single serving pies using this filling is quick and easy and they always seem to be a huge hit whenever they are served.
