No Bake Chocolate Cookie

Tasty no bake chocolate cookie recipe with low calorie low fat ingredients.Do you like chocolate? Do you think you can't have it if you're watching your weight, or trying to lose weight? In fact, you can -- and actually, if you do include a bit of dark chocolate in your diet on a daily basis (in moderation, that is), you're much more likely to be successful in long-term weight loss efforts.

That's because chocolate contains natural "feel-good" chemicals that make our brains feel like they do when we fall in love, at least on a temporary basis. It also contains caffeine and other energizing natural chemicals to give us a "perk up" if we are feeling a bit low. Even better, chocolate also contains heart healthy fats and antioxidants for good health. So go ahead -- indulge in a little bit of chocolate on a daily basis. The caveat is that it has to be dark chocolate, with as little sugar added as possible.

Another important addition to a healthy diet (especially if you want to lose weight) is to include some complex carbohydrates and fiber, as well as good fats. Canola oil and natural peanut butter (not hydrogenated, with no sugar added) add those good fats, with the oatmeal pulling double duty as a source of good complex carbohydrates and fiber. Put all of these into a dessert, and you've truly got a treat that's actually good for you. How do you do that?

Here are some sugar-free No bake Chocolate cookie recipe with peanut butter; these taste truly decadent, in that you may be tempted to reach for them slyly, just because you think they're naughty (even though they're not).

In addition to the addition of healthy chocolate in the form of cocoa powder, they also contain cholesterol-busting, fiber boosting oatmeal and some peanut butter, for a peanut butter cup taste in a truly healthy cookie.

Sugar-free No bake Chocolate cookie recipe with peanut butter added

10 tablespoons canola oil

4 ounces of skim milk

2 cups of Splenda/sucralose

3 cups old-fashioned rolled oats

A teaspoon of vanilla extract

Half a cup of natural peanut butter (chunky or smooth, your choice, with no sugar added)

6 tablespoons of cocoa

In a saucepan over low heat, mix canola oil, milk and sucralose, stirring constantly. Once mixture is melted, bring to boil for a minute, then take off of heat and add the rest of the ingredients immediately. Stir thoroughly and then drop by tablespoons onto cookie sheet lined with wax paper, pressing cookies flat with the back of a spoon as you do so. Let cool, and they will be ready. If you wish, these also freeze well if you want to make up a double batch ahead of time; simply thaw at room temperature for a few minutes before eating.
