No Bake Cherry Cheesecake Recipe

No Bake Cherry Cheesecake Recipe:

Does your mouth water at the thought of Cherry Cheesecake, even though you think you can't have any because it's too rich, decadent -- and unhealthy?

In fact, you can make healthy Cherry Cheesecake that's "No bake" for convenience (except for a brief visit to the oven for the crust and a couple of minutes in the microwave), in addition to being healthy. You just have to know what you're doing.

What substitutions can you make?

It's really up to you, but what you want to do is to make this heart healthier (less saturated fat) and lower in calories. That basically means you need to cut two things, saturated fat and sugar. That's pretty easy to do.

No Bake Cherry Cheesecake:

Substitutions for sugar

The easiest and most available substitution for sugar is the sweetener sucralose. (It's on the market under the brand name Splenda.) For No bake things, you should be able to replace all the sugar with sucralose; for things that need baking, you should be able to halve sugar amounts and replace with sucralose can taste, so that things will still brown.

Cutting saturated fat content with substitutions

What you substitute in saturated fat is up to you, because some people think that full fat cream cheese is the only thing that makes really good tasting cheesecake. If you're not one of them, you can use light cream cheese AND cut the saturated fat in the rest of the recipe, too. Or, you can promise that you'll be good and have a smaller piece of cheesecake made with full fat cream cheese, but with fat (and sugar, and calories) cut in other areas.

What to use instead of butter

When you make your graham cracker crust for your cheesecake, use a small amount of canola oil (about a tablespoon, perhaps a bit more) and a pinch of salt instead of butter as the fat.

Using "light" cherry pie filling

Light cherry pie filling has less sugar (sometimes no sugar, depending on the brand you get) and is every bit as satisfying as the full sugar version.

No Bake Cherry Cheesecake Recipe:

Sample recipe:


* 1 1/2 cups of graham cracker crumbs

* 1-1/2 tablespoons of olive oil

* Pinch salt

* Optional: one packet or 2 teaspoons of Splenda

No Bake Cherry Cheesecake:

Mix ingredients together and press into a nonstick-sprayed 9-inch pie pan; bake at 250 degrees for 10 minutes, just until graham cracker crust top is "toasted." (The sucralose edition is optional, because the graham crackers are sweet in and of themselves already, but if you prefer a sweeter crust, add the sucralose.)


While the crust is baking, mix the following:

* 2-8-ounce packages of light or fat-free cream cheese

* A tablespoon of vanilla extract

* A tablespoon of lemon juice

* 1 1/2 ounces of skim milk

* Enough Splenda to substitute for half a cup of sugar (follow instructions on package)

Mix ingredients thoroughly together, softening cream cheese in microwave oven for 30 seconds if necessary before adding to the rest of the ingredients, if difficult to stir in.


8 ounces of light cherry pie filling

Directions for pie "assembly"

Remove crust from oven, let cool; pour thoroughly mixed ingredients into crust; microwave cheesecake on high for two minutes until center has set. Cool, refrigerate two hours, then top with light cherry pie filling.
