Mashed Sweet Potato Recipe:

Ingredients Required

* 1 ½-2 pounds of medium sized sweet potatoes

* 2 eggs (whole)

* 2 egg whites or egg white substitute

* 1/2 cup granulated sugar

* 1/3 cup light brown sugar

* ½ teaspoon grated lemon zest

* 3 tablespoons of your favorite apple butter

* 1/3 cup organic honey

* 2 teaspoons vanilla extract

* 3/4 teaspoon ground cinnamon

* 1/2 teaspoon apple pie spice

* 1 cup (fat-free) evaporated milk

* ½ cup toasted walnuts

Mashed Sweet Potato Recipe:

1. Set your kitchen oven to 350°F degrees.

2. Bake the potatoes for at least 20-30 minutes.

3. Remove the jackets and then mash the potatoes or run them through a food processor until smooth.

4. You will need 2-3 cups of pureed mixture.

5. You can freeze any remaining baked potatoes if you prefer.

6. Whisk the whole eggs and egg whites in a medium sized bowl.

7. Now it is time to add the honey, sugars, spices, evaporated milk and apple butter.

8. Whisk all of these ingredients together.

9. As soon as the pureed sweet potato mixture has cooled you can add it to the mixing bowl.

10. ****If you make a mistake and add this puree while it is still warm it can cause the eggs to (coagulate). Do allow the vegetable puree time to cool properly before using.

11. Spoon the mashed sweet potato mixture into eight ramekins (1/2 cup size).

12. You can use other small baking dishes in place of the ramekins but they will all need to be set in a large roasting pan with enough hot water that covers the bottom half of each little dish.

13. Baking time is about 35-50 minutes.

14. You can check to see if the puddings have set by inserting a toothpick or butter knife into them. If they are done the toothpick or knife blade will be clean when removed.

15. Add toasted walnuts as an edible, healthy garnish.
