Low Sugar Peach Muffins


¼ cup low fat margarine

3 large peaches

¾ artificial sugar

1 egg beaten

1 ½ cups flour

1 tsp spoon baking powder

1 teaspoon baking soda

1 teaspoon vanilla

1 tsp ground cinnamon

Low Sugar Peach Muffin:


Preheat over to 350 degree Fahrenheit and line muffin tin with cupcake papers.

Peel, pit and puree peaches in the blender until smooth and creamy

In a large bowl mix together the flour, baking soda, and baking powder and cinnamon.

In another bowl combine low fat margarine, sugar substitute, egg, and vanilla. Add in pureed peaches and mix well.

Add dry ingredients to wet ingredient and combine again

Spoon evenly into cupcake cups and place in oven

Bake at 350 degrees Fahrenheit for 30 to 40 minutes or until a toothpick in the center comes out clean.

Cool slightly and serve warm with coffee, tea, or milk

Makes 1 dozen regular size muffins

These muffins come out incredibly moist and surprisingly sweet. Not only are they great to serve for breakfast but make a great meal choice for a holiday dinner. Take them to your next organizational meeting and everyone will eat them right up and come back for more, never realizing that they are low in sugar and quite low in fat as well.

These muffins can easily be transformed into cupcakes simply by adding a low fat cream cheese frosting to the top. The golden brown color of these Peach Muffins makes them as visually appetizing as they are tasty.

Although fresh peaches are best, it is also possible to make this recipe with frozen peaches as long as you allow them to thaw and then strain them before you puree them.
