Here is a simple and easy peach cobbler recipe that is great for those who are watching their weight or their glucose levels.

Low Sugar Peach Dessert-Cobbler


1-16 ounce package of frozen unsweetened peaches (thawed)

¼ cup cold water

2 Tablespoons Sugar (or sugar substitute)

3 to 4 tablespoons cornstarch

1 tablespoon lemon juice

¼ tablespoon cinnamon

Jiffy or Bisquick baking mix

Low Sugar Peach Dessert:


Preheat oven to 450 degrees Fahrenheit

Combine peaches, water, sugar, lemon juice, cornstarch and cinnamon in a medium size sauce pan and let set for about 15 minutes.

Mix enough biscuit mix for 8 biscuits

Cook the peach mixture over medium heat until thick and bubbly and then pour into a round baking dish (2 quart)

Drop biscuits on top of hot mixture

Bake for 15 to 20 minutes until biscuits are brown and a toothpick inserted into the middle comes out clean.

Serve warm

This recipe makes 8 servings

You can easily and simply make variations of this recipe by adding 1 cup of raisins and 1 cup of coarsely chopped pecans or walnuts. You can also cut the amount of peaches in half and substitute the other half with pears.
