1/3 cup brown sugar or brown sugar substitute
2 Tablespoons vegetable oil
1 teaspoon vanilla extract
1-14 ounce can of peaches drained and cut into chunks
1 large banana peeled and mashed
1 cup unbleached flour
1 tsp baking soda
1 teaspoon baking powder.
Low Sugar Peach Cake:
Preheat oven to 350 degrees Fahrenheit.
Grease an 8" by 8" cake pan
Mix egg, brown sugar, oil, vanilla extract, peaches, and bananas together in a large mixing bowl.
Add unbleached flour, baking soda and baking powder and mix all together
Pour into greased baking pan and bake for about 20 minutes or until the top of the cake is a beautiful golden brown color.
Cool and serve either as is or with a dab of low fat whipped topping.
