Low Sugar Lemon Pie:

6 ounce package of any lemon gelatin- use the "sugar-free" lemon gelatin

2 cups of boiling water- can microwave to save time

1 cups of cold water and 1 cup of ice cubes

1 package of soft tofu (about 12-14 ounces) make sure to drain tofu prior to use

4 tablespoons of fresh lemon juice-leave pulp in the juice

3 teaspoons of freshly grated lemon zest

½-1 teaspoon of lemon extract

1 (reduced fat) graham cracker pie crust

Low Sugar Lemon Pie:

Add the boiling water and gelatin to a large bowl.

Stir quickly to combine ingredients.

Add the ice cubes and cold water.

Make sure that you allow enough preparation time so that the ice cubes are completely dissolved.

Stir again and then place bowl in the fridge to chill.

The gelatin should be partially set when you remove it from the fridge.

Scoop the gelatin from the bowl and place in a blender.

Add the lemon juice, chopped tofu, lemon zest and lemon extract to the blender.

Pulse just until you have a smooth consistency-15-30 seconds.

Layer the mixture into a graham cracker pie crust.

Place the dessert in the fridge and allow it to chill for 3-8 hours before serving.

*As garnishes you might consider topping the servings of pie with a sprinkle of powdered sugar; some halved strawberries, or candied violets.

*Remember that this dessert is extremely rich, and you should be careful about the size of each serving. Even though the calorie count is remarkably low for each slice of this Lemon Pie there is no reason to overeat.
