6 tablespoons sugar

lemon slices, mint leaves or berries for garnish (optional)

½ teaspoon of ginger

2 tablespoons cornstarch

1 1/2 cups of skim, or fat-free milk

5 tablespoons of freshly squeezed lemon juice

1/2-1 teaspoon of lemon extract (optional)

1 tablespoon grated lemon zest

1 teaspoon vanilla extract

1 cup fat free whipped topping

Cooking Directions

Add sugar and cornstarch to a bowl.

Mix in the milk and blend until you have a smooth texture.

Place this mixture in a small saucepan and heat (medium setting) until liquid has reached a boil.

It is important to continue stirring while the mixture is being heated.

After the boiling point has been reached continue to cook this mixture for another 1-3 minutes.

Remove the pan from the stove and pour the contents into an oven-proof bowl.

If you have this bowl sitting in a pan of ice water it will stop the cooking process, preventing any inadvertent scorching.

Add the fat free whipped topping and fold in gently
