Low Fat, Low Sugar banana Muffin Recipe

This recipe takes about an hour to complete from start to finish and is great to serve for breakfast or as a snack.


1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon cinnamon

1 teaspoon sugar or sugar substitute

2 large mashed bananas

2 teaspoons apple sauce

1 large egg beaten

¼ chopped walnuts (optional)

Low Sugar Banana Muffin:


Preheat oven to 350 degrees Fahrenheit. Line 6 cup muffin pan with cupcake papers or grease lightly.

In a large mixing bowl combine flour, baking powder, cinnamon, and sugar or sugar substitute.

In another large bowl mix the mashed bananas with the beaten egg and the applesauce. Slowly stir in dry ingredients and mix together well. Add the nuts and fold in into the mixture.

Spoon the mixture into the muffin cups filling 2/3 full. Bake at 350 degrees Fahrenheit for 30-45 minutes or until toothpick inserted into the center comes out clean. Remove from oven and place on wire rack to cool. Serve with fresh juice, coffee or your favorite beverage for breakfast or as is for a healthy mid morning or afternoon snack.

It is the combination of bananas and applesauce in this recipe that makes these muffins naturally sweet which allows you to use less sugar than with other muffin recipes.
