Low Sugar Banana Cake

Although this recipe does contain only half the sugar used in most banana cake recipes it still does contain sugar. So, if you are making this cake for someone who needs to watch their glucose levels you might want to use a brown sugar substitute for the 1/3 cup brown sugar this recipe calls for.
2 to 21/2 cups over ripe bananas peeled and mashed
2 cups all purpose flour
½ cup brown sugar or brown sugar substitute
½ cup melted low fat margarine
2 eggs beaten
1 teaspoon baking soda
2 to 3 cups applesauce
2 teaspoons ground cinnamon
Preheat oven to 350 degrees Fahrenheit.
Lightly grease round cake pan
In a large mixing bowl combine flour, sugar, and baking soda
In a separate bowl mix melted butter and brown sugar, add eggs and mashed bananas
Pour the banana mixture into the dry ingredients stirring well until all the ingredients are blended.
Pour cake mix into cake pan and place in oven
Bake at 350 degrees Fahrenheit for 40 to 60 minutes or until knife inserted in the center comes out clean.
Place on cooling rack for a few minutes or until cake pan is cool to touch
Run a knife gently around the edge of the cake to loosen it from the sides of the pan
Place a cake plate over the top of the cake pan and turn upside down to release cake onto the plate.
Allow to completely cool before cutting and serving.
Just before serving pour applesauce into a sauce pan and add cinnamon. Heat until warm. Pour into a bowl and serve with cake allowing each person to put the amount of cinnamon applesauce topping they desire over their piece of cake.

If you prefer you can use strawberry applesauce served warm or cold or warm crushed pineapple with walnuts as a topping over this cake or even fresh berries top with fat free whipped topping.
