With this Low Sugar, low fat dish you can enjoy the sweet flavors you crave, and still have a guilt-free conscience. Apples add anti-oxidants, vitamins, fiber and essential minerals to this wonderful cake and the small amount of sugar and fat makes this a perfect treat to enjoy any time of the day, or night.

Low Sugar Apple Cake:


4 cups diced, cubed apples

3 cups whole wheat bread flour

1 ½ cups white pastry flour

Dash of salt

½ cup buttermilk

½ cup plain yogurt

½ cup (NAS no added sugar) applesauce

1 ½ tablespoon baking powder

1 tablespoon of apple pie spice

1 teaspoon of ground cinnamon

1/3 cup raw sugar

¼ cup Splenda (optional)

1/3 cup butter-warm in microwave until butter is very pliable but not completely melted

2 tablespoons grated orange zest

3 beaten eggs-use only free range or organic eggs

Low Sugar Apple Cake:

Set oven for 400F

Use parchment paper to line a rectangular baking dish (9 in x 13 in)

*Can use a Bundt pan if desired

Wash, peel, core and chop apples

*May sprinkle with Fruit Fresh or a little lemon juice to prevent browning

Sift the two types of flour together in a mixing bowl

Add the salt, spices, sugar and baking powder and sift all of the ingredients once again.

In a deep dish bowl add the beaten eggs to the buttermilk

Whisk together with applesauce, yogurt and butter

Add the orange zest to these moistened ingredients

Add the apples and then fold the mixture into the bowl with the sifted flour

Carefully pour the batter into the baking dish or Bundt pan

Bake at 400F for 20-30 minutes

For a moister cake remove the pan from the oven after 20 minutes and allow cooling to room temperature.

*Can sprinkle the apple cake with a light dusting of powdered sugar and shaved orange peel prior to serving
