Chicken Salad With Strawberries

For this recipe you can use left over chicken or even turkey breasts and these breasts can be baked, grilled, or boiled.

Low Fat Strawberry Chicken Salad Recipe:


8 ounces of cooked turkey breast diced

1/2 cup fresh strawberries hulled and sliced

1/4 cup onions (finely diced)

1/4 cup celery (finely diced)

1/4 green pepper (finely diced)

enough shredded carrot for coloring (boiled or roasted carrots that are cold and diced also taste great in this recipe)

2 to 3 Tablespoons Of low fat mayonnaise

2 or 3 Tablespoons low fat yogurt

2 Tablespoons of skim milk

1/4 teaspoon black pepper


Low Fat Strawberry Chicken Salad Recipe:

In a mixing bowl combine chicken, strawberries, onions, celery, green pepper, and carrot. In another mixing bowl combine mayo, yogurt, skim milk, and black pepper. Mix well then mix in chicken and vegetable mixture. Refrigerate and serve with a few snack crackers, or with a slice of toast.

Makes 4 servings.

The yogurt in this dressing helps to reduce the fat and calories from the mayonnaise while the skim milk helps to increase the amount of dressing while helping to keep the calorie count low. One of the nice things about this recipe is that the green peppers, strawberries, and carrots all help to give this strawberry chicken salad a bright festive color that makes this salad particularly appetizing while still allowing you to get all those benefits from those nutritious strawberries.
