Low-in-fat Lemon Bars
Low Fat Lemon Recipe:
For the Base
1 cup all-purpose flour 1/4 cup Splenda 1/2 cup quick oats 3 tbsp margarine
For the Topping
1 egg 1 egg white 1 cup Splenda 3 tbs flour 1/4 tsp baking powder Pinch of salt Juice and zest of 1 large lemon Confectioner's sugar, sifted, for sprinkling
Low Fat Lemon Recipe:
Preheat your oven to 350 degrees. Spray an 8-inch square baking pan with some nonstick cooking spray. In a bowl, mix together Splenda, oats and the flour. Use a pastry blender to stir in the margarine, and blend until this mixture approaches a crumbly sort of texture. Push the crumbs into the baking pan’s bottom, and then bake for 10 minutes so that the edges get golden. At the same time, whisk together both the egg and the egg white. Combine Splenda with this and then beat until it reaches a creamy texture. Finally, add the flour, the baking powder, the salt and the zest and the juice of the large lemon, and whisk all of this together until it gets to a smooth consistency.
Now, pour this lemon mixture over the pre-baked base. This is where the real fun begins, as you are going to have to bake this whole thing for a total of 20 or 25 minutes. Alternately, you can also bake it for a little shorter or a little longer time if you notice that the center of the lemon bars is already set. You should cool this in the pan for 15 minutes prior to transferring to a wire rack for a total cooling-off opportunity.
