Cranberry Chicken

This is a chicken and cranberry recipe that uses skinless chicken breast baked in a low fat, low sugar homemade cranberry sauce. Chicken is considered a food that burns fat simply because 1/3 of the calories that the chicken breast contains are burned digesting the chicken. Then this dish also uses apple juice and whole cranberries which are both excellent foods for helping to burn fat.

This recipe is low in fat and sugar and can be enjoyed any time of the year. In addition, the sauce the chicken is cooked in goes equally well on pork chops and fish.

Ingredients:

・ 4 skinless boneless chicken breasts (about 3 1/2 ounces each)

・ 2 cups fresh cranberries

・ 6 ounces fresh apple juice (no sugar added)

・ 1 tablespoon sugar (or the equivalent in sugar substitute)

・ 1/2 teaspoon orange zest

Low Fat Chicken Cranberry Recipe With Apple Juice:

Directions:

Preheat Oven to 350 degrees Fahrenheit.

In small sauce pan put in the cranberries, apple juice, and orange zest and cook over medium heat stirring occasionally until the cranberries pop. Stir in sugar and allow to gently simmer until sauce thickens slightly.

In a baking dish arrange the 4 chicken breasts scoring the top of breasts to allow the sauce to cook into the meat better. Spoon or pour sauce over the chicken breast and bake in oven for 25 or 30 minutes or until breasts are tender and cooked completely through.

Serve with a tossed green salad or over a bed of brown rice.
