• 1-14 ounce can low sodium chicken broth or homemade chicken broth

• 3 tablespoons low fat sour cream (room temperature)

• 1/2 teaspoon parsley flakes

Directions:

Low Fat Apple Recipe:

In a sauce pan heat the olive oil, add the potatoes, apples, onion, celery and seasonings and cook until onions are soft and translucent. Add chicken broth and bring to a boil. Reduce heat to a gentle simmer and cover. Continue cooking until the potatoes are tender when tested with a fork.

Pour contents into blender and add the sour cream blending until smooth. Pour into bowls garnish with parsley flakes and serve. Makes 2 to 3 servings.
