Summer Turkey Salad With Orange Infused Oil Dressing

Kid Friendly Orange:

Ingredients:

・ 3 cups torn fresh baby spinach

・ 1- apple peeled and sliced into thin slices

・ 1/3 cup raisins

・ 1/3 cup shredded walnuts

・ Turkey breast cooked and cut into thin strips

・ 4 Tablespoons olive oil

・ 1/4 cup orange juice (freshly squeezed or unsweetened)

・ salt and pepper to taste

Directions:

In large salad bowl, combine torn fresh baby spinach, sliced apple, raisins, carrots, and walnuts mix well ( or you can arrange the spinach on the bottom a plate, then place the other ingredients on top of the spinach in an attractive and appetizing manner.) Lay turkey strips on top of the salad.

In a small jar with a lid, add olive oil, juice and seasoning and shake until well mixed and either add to salad and toss or spritz over individual salads.

Kids love this salad that combines healthy fruits and vegetables and the unusually flavorful dressing adds just the right sweetness to make most kids feel like they are eating a treat rather than a boring old salad. This salad can be served with or without the turkey. With the turkey, it makes a great light lunch before heading out to the beach and without the turkey, this salad can be served with fish, chicken, pork and even hamburgers!
