All too often, the battle is lost when parents give in to their children's craving for those deep fried chicken fingers and fries. But what if you knew you could provide your child with the foods they love cooked in a healthier and even tastier manner. With a little ingenuity, some patience and few really great kid friendly healthy recipes, you can turn that dinner time battle into delight.

This healthy recipe for a kid friendly dinner is surprisingly healthy and simple to make and just may put an end to those dinner time battles.

Kid Friendly Chicken Low Fat Recipe:

Baked Chicken Fingers And Sweet Potato Fries

・ 2 large boneless skinless chicken breasts cut into strips

・ 2 cups low fat yogurt

・ 2 cups corn flakes finely crushed

・ 1 teaspoon garlic

・ 1 egg plus, 1 egg white

・ 1/2 teaspoon dried Italian dressing

・ 1/4 teaspoon celery seeds

・ 1 to 2 tablespoons low fat or skim milk

・ 1 packet of ranch dressing mix

・ 2 medium to large size sweet potatoes

・ 1/2 teaspoon cinnamon

Directions

Kid Friendly Chicken Low Fat Recipe:

In a mixing bowl or plastic container with a lid, mix 1 cup low fat yogurt and celery seeds. Put in the breast strips, making sure that all are completely covered, put on lid and refrigerate and allow to marinade for 3 to 4 hours.

Before removing the meat from the refrigerator and it's marinade, wash and slice the sweet potatoes into french fry size strips and spread out on a cookie sheet brushed lightly with olive oil to prevent sticking and sprinkle with cinnamon. Preheat Oven to 400 degrees Fahrenheit.

In a zip lock bag, combine crushed corn flakes, Italian dressing and garlic. Remove the strips from marinade and lay on a clean plate, take the egg and egg white and 1/3 cup of the marinade mix and whisk together. Dip the breast strips into the egg and yogurt mixture and then drop one at a time in cornflake mixture and shake to make sure each strip is well coated. Lay each coated breast strip on another cookie sheet lightly brushed with olive oil.

Once all the strips are coated, place both cookie sheets in the oven and bake at 400 degrees for about 20 minutes or until strips are done. Turn the sweet potato fries over when half way done sprinkling with cinnamon again.

While the fries and breast fingers are baking, make the dipping sauce by mixing the other cup of plain yogurt with 2 tablespoons of low fat or skim milk and ranch dressing mix to taste. Serve with a couple of carrot and celery sticks and a cup of fruit for a healthy meal that is sure to please kids and adults alike.

Makes 3 to 4 servings.
