Homemade Pumpkin Pie Recipe Low Fat Low Sugar:

Ingredients:

1-15 ounce can of pumpkin

1-14 ounce can of fat free condensed milk

1 whole egg and 2 egg whites blended together

2 teaspoons pumpkin pie seasoning (or ½ teaspoon of ginger and nutmeg and 1 teaspoon of cinnamon)

1-9 inch pie shell

Directions:

Preheat oven to 425 degrees Fahrenheit.

In a large mixing bowl combine pumpkin, condensed milk, eggs and seasoning and blend until smooth and creamy.

Pour into pie shell

Bake at 425 degrees Fahrenheit for 15 minutes and then reduce temperature to 350 degrees and continue baking for an additional 25 or 30 minutes or until a knife inserted in the center comes out clean.

Allow to stand a few minutes and then refrigerate until time to serve. Serve as is or with a low fat whipped topping.

NOTES:

If you choose to make this dessert minus the crust then you can simply pour the pumpkin mixture into a large round baking bowl or individual custard cups and bake following directions. However, if using individual custard cups you may want to turn the oven temperature down after 10 minutes and begin checking to see if the pumpkin is done after an additional 15 minutes.

Some recipes call for using ½ cup of egg substitute instead of real eggs however; many people complain that egg substitutes don’t set up as well.

Please keep in mind that although this homemade pumpkin pie is low in fat your holiday meal needs to be as well. Look for ways to decrease the overall fat in your entire holiday dinner by offering plenty of fruit and vegetable choices. Using less butter, lean cuts of meat and other wise choices will be wise.
