Homemade Icecream Recipe

Incredibly delicious low fat homemade icecream recipe.There is nothing more refreshing on a hot summer's day or night than a nice cold bowl of ice cream. But let's face it, ice cream is high in fats especially saturated fats and is just one of those things that a healthy heart simply can do without.

However, what can you do when your taste buds are demanding one thing and your health another? The options are clear, either you find a lower fat and healthier substitute or you decide to make your own low fat ice Cream.

Making this tasty treat does not have to be difficult and there are a number of great recipes out there that will give you all the creamy sweet goodness of the best homemade ice cream without all the fat. Here is a great low fat recipe that appeared in a 2008 online issue of Eating Well Magazine.

Homemade Low Fat Vanilla Ice Cream

This makes about 1 quart and is a simple recipe to follow.

Homemade Icecream Recipe:


1 ½ teaspoons of gelatin, unflavored

1 tablespoon of water

3 cups of low fat or nonfat milk, divided

3 large egg yolks

1-14 ounce can of nonfat condensed milk

1 vanilla bean

Homemade Icecream Recipe:


Begin by placing the tablespoon of water into a small cup and sprinkling in the gelatin. Stir once or twice and let stand.

Pour 1 ½ cups of milk into saucepan. Cut the vanilla bean in half lengthwise and scrape the seeds out into the milk and then add the pod.

Whisk condensed milk and egg yolks together in a medium size mixing bowl. Set aside

Heat the milk on medium heat until steaming (do not bring to a boil) gradually whisk hot milk into yolk mixture until well blended. Pour the entire mixture back to the pan and gradually heat over medium heat, using a wooden spoon to stir (about 3 to 5 minutes) until the back of the wooden spoon becomes coated. Do not let mixture come to a boil.

Strain mixture through a fine wire mesh colander into a large clean bowl. Mix in the gelatin mixture and whisk until completely melted. Now add and whisk the remaining 1 ½ cup of milk cover and refrigerate for two hours.

Whisk again and pour into canister of ice Cream maker. Follow the manufacturer's directions for freezing it.

Notes: If needed, you can place in freezer to firm up the ice cream.

When serving you can serve this homemade ice cream alone or top with your favorite fresh or frozen fruit.

This creamy and low fat dessert tastes a lot like frozen custard and is great to serve on those really hot days when everyone wants a bit of ice cream.
