Cutting corners can save time and provide a tasty treat but there is simply nothing better than a nice creamy dish of Homemade Banana pudding to serve as the perfect end to the perfect meal or to simply enjoy as a light snack in the middle of the day.
Of course, a lot of recipes these days call for a bit of butter and other ingredients that add fat, which makes them the wrong choice for those who are trying to reduce their fat consumption and eat healthier. However, there are low fat versions of this delightful dessert that can be found. Many of these recipes call for vanilla wafers and other extras.
However, the recipe that we will be sharing with you today is for just plain Homemade Banana pudding with no extras. We thought we would leave it up to you whether to add vanilla wafers, crushed graham crackers or even additional fruit or whipped topping. This is a simple straightforward dessert that you can enjoy as is or dress up to suit the occasion.
Homemade Banana Pudding Recipe:
2 cups low fat or nonfat milk
½ cup of sugar
1/8 teaspoon salt
3 tablespoons of cornstarch dissolved in ½ cup of nonfat milk
1 teaspoon vanilla extract
2 medium to large ripe bananas cut into slices
Homemade Banana Pudding Recipe:
Heat milk, sugar and salt in medium size saucepan until scalded (do not boil just have it steaming with little bubbles forming around the edges.)
Combine cornstarch and ½-cup nonfat milk and blend until smooth adding to the saucepan. Bring milk close to boiling while stirring constantly. Reduce heat and continue cooking until mixture thickens
Layer slices of bananas in the bottom of four dessert bowls or cups and spoon pudding on top of bananas. Continue alternating layers until the dessert bowls are full. Make sure the top layer is pudding mixture and not bananas. Cover with plastic wrap and refrigerate until ready to serve.
When serving you can serve as is, with low fat cookies or brownies or top with fat free whipped topping or fresh berries. This banana pudding makes a great ending to almost any meal providing something that is sweet, light and very low in fat.
