Shrimp And Pepper Stir Fry

Ingredients:

・ 1 pound of medium or large frozen shrimp cooked and shelled with the tails cut off

・ 1 each large red, green, orange, and yellow bell pepper. Seeded and cut into strips

・ 1 medium onion peeled and cut into strips

・ 1 clove garlic cleaned and diced

・ 2 Tablespoons olive oil

In a wok or large sautee pan, place the 2 Tablespoons olive oil and heat. Then add the onions and garlic and cook until the onions are tender before adding the rest of the ingredients. Cook until the shrimp is heated through making sure the peppers are a bit on the firmer side (unless you like your bell peppers softer.)

Place on dinner plates and serve (makes 4 servings)

For those who want a more hearty meal this stir fry can be served over brown and long grain rice.
