Basic Muffin Recipe

Ingredients:

1 ½ cups wheat germ

½ cup wheat flour

½ all-purpose flour

1 cup nonfat milk

½ cup unsweetened applesauce

1 egg

1/2 cup brown sugar (or brown sugar substitute)

1 tsp. vanilla

1 tsp. baking soda

1 tsp. baking powder

1 teaspoon cinnamon

Optional Ingredients

Choose from the following ingredients to add to your muffin mix

1 cup slice strawberries

1 cup blueberries

½ cup grated carrots

1 ½ cup finely chopped apples

1 cup raisins

1 cup cranberries

raspberries

1 cup chopped walnuts or almonds

½ cup crushed pineapple (in place of the applesauce)

Directions

Preheat Oven to 375 degrees Fahrenheit. Line muffin pan with cupcake papers or grease cups in pan.

Mix together wheat germ and milk and let stand (10 to 15 minutes).

In a large mixing bowl, mix applesauce, egg, brown sugar, cinnamon and vanilla and then add the wheat germ and milk.

Sift together the baking powder, baking soda, wheat flour and all-purpose flour stir into bran mixture just enough to blend it all together and then add one of your optional ingredients and spoon into muffin tin.

Bake at 375 degrees Fahrenheit until a toothpick inserted in the center comes out clean.

As you can see by starting with this basic muffing recipe, you can make a wide variety of different muffins that are all low in fat, and exceptionally tasty. Substituting the crushed pineapple for the applesauce not only makes an extremely moist muffing but it also tastes a lot like pineapple upside down cake especially when you add a few crushed or chopped walnuts to the batter.
