Two pounds of extra-lean beef stew meat, without excess fat, cut into one-inch pieces


One-third of a cup of all-purpose flour

Nonstick cooking spray

One medium onion, chopped

One teaspoon of minced garlic

One cup of sliced carrots

Two tablespoons of snipped fresh parsley

One-half of a teaspoon of dried thyme, crushed

Five cups of fat-free, reduced-sodium chicken broth

One cup of water

Two cups of potatoes, peeled and cut into 1-inch chunks

Two cups of sweet potatoes, peeled and cut into 1-inch chunks

One cup of coarsely chopped Roma tomatoes

Eight ounces of sliced mushrooms

One-half of a cup of medium barley

One cup of frozen peas

Healthy Heart Cholesterol Low Sugar Low Fat Recipe:

Use the pepper to season the meat to taste, and coat it with flour. Inside of a six-quart, nonstick Dutch oven that has been coated with nonstick cooking spray, cook the meat over medium heat until it has been browned, which should take around 5 minutes.

Now add both the garlic and the onion, being sure to sauté for a few more minutes. Add the carrots, thyme and parsley, and sauté for between 3 and 5 minutes. The water and the broth should be added next, and you should then bring this to a boil, scraping the pan’s bottom as you do.

Lower the heat, cover the pan and simmer for 45 minutes. Put in the potatoes, the barley, the mushrooms, the sweet potatoes and the tomatoes. Return the pan to boiling, lessen the heat and keep on cooking it with the cover on top for between 30 minutes and 45 minutes. Cook it on low heat or until both the vegetables and the meat get tender. Finally, add the peas and stir for 1 minute.
