Healthy Heart Chicken Low Fat Low Sugar Recipe:

Let’s now look at just such a recipe, which comes to us from the Eating Well recipe. It is a recipe for Chicken Piccata with Pasta and Mushrooms. Here are the ingredients:

Six ounces of whole-wheat angel hair pasta

One-third of a cup of all-purpose flour, divided

Two cups of reduced-sodium chicken broth

One-half teaspoon of salt, divided

One-quarter teaspoon of freshly ground pepper

Four chicken cutlets, (Three-quarter to one pound total), trimmed

Three teaspoons of extra-virgin olive oil, divided

One Ten-ounce package of mushrooms, sliced

Three large cloves of garlic, minced

One-half a cup of white wine

Two tablespoons of lemon juice

One-quarter cup of chopped fresh parsley

Two tablespoons of capers, rinsed

Two teaspoons of butter

Healthy Heart Chicken Low Fat Low Sugar Recipe:

Boil a big pot of water, and add your pasta to cook it until it gets tender (4 to 6 minutes). Drain and then rise.

At the same time, whisk 5 teaspoons of flour and broth in a bowl until they get smooth. Store the leftover flour in a shallow dish. Season chicken with salt/pepper and apply flour to both sides. Then heat up 2 teaspoons of oil in a big, nonstick pan over medium heat. Put in the chicken, cooking until it’s no longer pink in the middle, which is around 2 to 3 minutes a side.

Healthy Heart Chicken:

Heat the leftover 1 tablespoon of oil in the pan over medium heat. Put in the mushrooms and stir for around 5 minutes. Set that aside on a plate. Now, put in the wine and the garlic and cook it until it gets reduced by 50 percent, which is 1 to 2 minutes. Add the leftover broth-flour combination, lemon juice and some more salt. Bring this to a simmer and cook further, stirring so that the sauce gets thicker.

Finally, put in parsley, mushrooms, butter and capers. Measure half a cup of the mushroom sauce, and toss the pasta inside the pan with the leftover sauce. Serve this pasta topped with both the leftover sauce and the chicken.
