Lemon Pepper Fish


・ 2- 3 1/2 fish fillets (any type of fish will do but fatty fish such as salmon or tuna steaks give you omega 3s which are great for burning fat.

・ 1 lemon

・ 1 small onion, sliced

・ salt, pepper, and paprika to taste

・ 1 tablespoon olive oil

Preheat oven to 350 degrees Fahrenheit. Lay fish fillets in the bottom of a small baking dish. Using a small pastry brush, lightly coat both sides of the fish with olive oil. Cut the lemon in half and using half the lemon, squeeze lemon juice on both sides of each fish fillet seasoning with salt, pepper and paprika. Slice the other half of the lemon and then lay the onion slices on the fish with a lemon slice or two on top.

Bake at 350 degrees for 15 to 20 minutes, or until fish is done and flakes with a fork. Serve with fried cabbage over brown rice.

You can also make grilled lemon pepper fish, shrimp or scallops simply by squeezing the juice of one or two lemons over the seafood as it cooks or soaking the shrimp or scallops in lemon juice for 10 or 15 minutes before cooking and then adding pepper while the seafood is on the grill.

You can also make lemon pepper chicken using the same basic recipe and substituting the fish with chicken breasts. If you want to make an entire lemon pepper roasted chicken, then use 3 lemons, brush the entire chicken with olive oil, squeeze the juice of two lemons over the outside of the chicken and sprinkle on the seasonings. Then cut the third lemon into slices and place inside the chicken with more spices and then roast as you normally would.
