• 6 ounces dried whole wheat Penne
• 1 tablespoon olive oil
• ¼ cup coarsely chopped walnuts
• 4 cloves garlic thinly sliced
• ½ of each of the following: green, red, orange, and yellow pepper seeded and sliced in bite size strips.
• 1 small sweet onion cut into thin wedges
• 1 cup red cherry tomatoes cut in half
• ¼ cup snipped fresh parsley
• ½ teaspoon diced crushed Rosemary
• 2 tablespoon grated Parmesan cheese (optional)
• black pepper to taste
Cook penne according to directions on the package, drain and set aside. In a medium skillet heat olive oil and add walnuts and garlic, cook until light brown stirring frequently, add peppers and onion, cook for an additional 5 minutes or so until vegetables are crisp and tender. Add the tomatoes and cook until heated through. Stir in the rest of the seasonings. Put pasta into a shallow serving bowl top with vegetables and nuts, toss gently and serve.
This recipe makes 4 servings and the diabetic exchanges are 1 vegetable, 2 starches, and 2 fat.
