Raspberry Custard Pie
Low Fat Low Sugar Recipe:Ingredients:
1 cup Jiffy baking mix
1 ½ teaspoons granulated sugar (or sugar substitute)
1/3 cup 2% milk
2 ½ cups fresh raspberries
½ cup fat free sour cream
2 egg whites
½ cup granulated sugar or sugar substitute
3 tablespoons all purpose flour
½ teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon nutmeg
Low Fat Low Sugar Recipe:
Preheat oven to 450 degrees Fahrenheit
Combine baking mix, 1 ½ teaspoons sugar or sugar substitute and 2% mix. Then with floured fingers press in the bottom and up the sides of a pie dish that has been coated with cooking spray. Sprinkle berries onto the bottom crust.
In a medium to large mixing bowl combine all the rest of the ingredients and blend until well mixed and creamy. Pour into pie crust over the berries. Cover the edges of the crust with tin foil to keep the edges from burning and place in 450 degree oven for ten minutes. Turn oven down to 350 degrees and bake another 30 to 40 minutes or until the center is set.
Allow to cool and set.
Although this recipe calls for raspberries, some Custard Pie Recipes use other ingredients such as fresh blackberries, strawberries, blueberries, strawberries or other ingredients. Try using a mix of several types of berries or using cherry or apple pie filling in place of the berries.
