Ingredients
* 5 cups fat free milk (can use skim milk or 2% milk)
* ¼ cup of honey
* 1/4 cup granulated white sugar
* ¾ cup uncooked brown rice (can use white rice as an option)
* 1/3 cup raisins
* 1/3 cup dried apricots, diced
* 1/3 cup dried peaches, diced
* ¼ cup brown sugar
* 1 teaspoon vanilla flavoring
* 2 teaspoons ground cinnamon
* ½ teaspoon apple pie spice
* 3 teaspoons grated orange zest
* 1 teaspoon grated lemon zest

It will take you about 3-4 hours to prepare and cook this fruit filled, spicy dessert.
Add the sugar, vanilla, honey, rice and milk to a large crock pot. Stir to combine and then cover the crock pot and cook on the highest setting for 3 hours.
You should check the rice about every 30 minutes and give the mixture a stir.
Add the raisins, citrus zests, cinnamon, apple pie spice and other fruits and adjust heat setting to ‘low' for the next 15 minutes.
Always remember to replace the cover on the crock pot.
The rice will be ready when it has a cream-like consistency.
The total cooking time should be 3 ¼-4 hours. Best results are generally achieved when you stop the active cooking process at the 3 ¼ hour mark.
This will still give the Rice pudding a chance to ‘set' properly.
Top with a bit of fresh citrus zest and a sprinkle of cinnamon.
