Chocolate Pudding Pie Recipe:

Ingredients

4 cups of fat free milk (divide in half)

2 cups of sliced strawberries (divide in half)

8 ounces of fat free or reduced fat whipped topping (divide in half)

2 small packages of a sugar free Chocolate pudding mix (instant variety)

2 Graham cracker crusts (reduced fat variety)

2 small packages of a sugar free white Chocolate pudding mix (instant variety)

*1 ounce of dark chocolate (shave into curls)

*4-6 fresh mint leaves and a small handful of whole raspberries or strawberries

Directions

Combine one of the pudding mixes and 2 cups of milk in a deep bowl and mix on high speed for 2 minutes.

Add half of the fat free topping and a cup of berries.

Gently fold these ingredients into the pudding mix.

Spread half of the mix into the bottom of each graham cracker crust.

Place in the refrigerator to chill while you complete the remainder of the preparations.

Repeat the above steps using the remaining box of pudding mix and then gently add the contents of the bowl to each graham cracker crust.

This will create contrasting layers of color in the pie.

Chill in the refrigerator for 3-6 hours before serving.

You can use the shaved curls of dark chocolate, whole berries and mint leaves as an edible garnish.

A slice of this chocolate pie will provide 200-225 calories and approximately 7 grams of fat. On a diabetic menu you can exchange a slice of this pie for 1 fat and 2 starch choices.
