Pantry Items Needed

Egg substitute equivalent to 1 large egg- (can use an organic whole egg if preferred)

½ cup granulated white sugar1/3 cup light brown sugar- packed tightly in measuring cup

1/4 cup canola oil and ¼ cup unsweetened applesauce

1/4 cup of a low-fat vanilla flavored yogurt

½ teaspoon ground cinnamon

½ teaspoon apple pie spice

1 ½ teaspoons pure vanilla extract

1 ½ teaspoons chocolate extract

1 ¼ cup of Quick Cooking oats (do not cook before using)

2/3 cup Hershey's¨ cocoa powder

1 1/2 cups cake flour

1 level teaspoon baking powder

2/3 teaspoon baking soda

1/8 teaspoon salt

***Optional -add ¼ cup dried cranberries, ¼ cup diced, toasted walnuts, or ¼ cup raisins to the recipe ingredient list. You can even add all of these healthy ingredients if you desire.

Chocolate Chip Oatmeal Cookie Recipes:


Preset the oven temperature to 350F.

Combine the egg, canola oil and sugar in a large mixing bowl.

Beat with a mixer until these ingredients have a smooth consistency.

Now add the yogurt, flavoring extracts, oat flakes, cocoa and dry spices.

Chocolate Chip Oatmeal Cookie Recipes:

Blend well.

Sift the flour, baking soda, salt and baking powder together before adding to the mixing bowl.

Beat all of the ingredients together until everything is well combined.

The wet batter should be allowed to rest for 15-20 minutes. This will give the liquid a chance to be absorbed by the oat flakes.

If using any of the optional ingredients, you can add them at this time.

You can line a cookie sheet with aluminum foil or spray the sheet with PAM before using.

Use a teaspoon to measure out ‘balls' of this cookie dough and then drop them onto the cookie sheet.

Only bake the cookies for 6-7 minutes. They should have a puffy appearance when you take them out of the oven.

Let the cookies cool on a rack for 5-10 minutes before serving.
