When you need a recipe that provides wonderful flavors, tantalizing sweetness and low fat value why not consider preparing candied yams?

The humble potato is one of the most nutritional and satisfying vegetables you can bring to the dinner table. With so many varieties of ‘tubers' from which to choose you can create a new dish every day.

Yams and sweet potatoes are very closely related. You can find both varieties available in many stores and in most instances these ingredients are easily interchangeable.

Baked sweet potatoes are a classic favorite and for most holidays you will find some type of sweet potato casserole being served to hungry and appreciative guests.

If you thought a low fat meal could not include rich, sweet, candied yams you are in for a surprise.

Try this recipe for candied yams that will have everyone begging for a second serving.

Candied Yams Recipe:


4 cups cooked sweet potatoes (peeled and mashed)

1 teaspoon vanilla extract

1/2 cup orange juice (pulp free variety)

½ cup pineapple juice

1/3 cup Splenda- brown sugar

1 teaspoon of ground cinnamon

¼ teaspoon allspice

1 teaspoon grated orange zest

¼ teaspoon ground nutmeg

Cooking Instructions

Preheat your kitchen oven to 350F.

Spray a 9 x 13 baking pan or medium sized casserole dish with a non-stick baking spray. Use only a very light coating. Some cooks prefer to use a butter flavored spray and others omit this step. The option is yours.

Bake or boil 6 sweet potatoes or yams (yield 4 cups cooked potato) until they are ‘fork-tender'. Boiling will take about 25 minutes and baking will take about 35 minutes.

Let the potatoes cool slightly, then remove the jackets and cut into slices about ¼"-1/3 "thick.

Arrange half the yams into the bottom of a 9x13 inch baking pan or medium casserole dish.

Mix the dry spices, sugar and orange zest together and sprinkle 1/3 of this spice rub over the layer of yams.

Place another layer of sliced yams in the baking dish.

Sprinkle with 1/3 of the mixture of sugar, dry spices and orange zest

Mix the fruit juices and vanilla extract together and then carefully pour over the yams.

Sprinkle the remaining 1/3 dry spices over the tops of the sweet potatoes.

Bake for 30-40 minutes in a 350 F oven. Make sure that the baking dish is uncovered.

Once the candied yams have finished cooking you can remove the pan from the oven and serve immediately.
