Candied Sweet Potato Recipe:

* 6 pounds sweet potatoes

* 3-4 large peeled peaches

* 4 Rome or Granny Smith apples

* 6 tablespoons butter

* ½ cup dark brown sugar

* 2 cups sugar

* 2 teaspoons ground cinnamon

* ¼ cup organic honey

* 2 teaspoons nutmeg

* 4 teaspoons vanilla extract

* 1/2 cup peach juice (no sugar added)

* 2 teaspoons lemon zest

* 2 teaspoons orange zest

* 2/3 cup orange juice

* Juice of 1 lemon

Candied Sweet Potato Recipe:

Directions

Wash the potatoes; wash and core the apples.

Bake them in a 400F oven for 45-60 minutes. (until fork tender)

Peel the sweet potatoes and apples and then slice each one into thick chunks.

Put the slices into a 2-3 quart casserole dish.

Peel the peaches, cut into thick slices and add these to the potato slices.

Divide the butter into small pats and arrange over the potatoes and apples.

Combine the peach, lemon and orange juices together.

Combine the dark brown and white granulated sugar together with the remaining seasonings.

Evenly sprinkle the sugars/seasonings over the apples and sweet potatoes.

Bake in a covered casserole dish in a 350F oven for 20 minutes.

Remove from oven and add the mixed juices to the casserole.

Return the casserole to the oven and cook uncovered for 40- 60 additional minutes.

The candied effect from the butter, sugars and juices will make this a dish that you will be proud to serve at any dinner or family gathering.
