Simple Hearty Baked Oatmeal With Fruit

Baked Oatmeal Recipe:


3 cups oatmeal

½ cup brown sugar

2 teaspoons baking powder

½ teaspoon cinnamon ½ teaspoon nutmeg

½ cup applesauce

1 teaspoon vanilla

1 egg and 2 egg whites whisk together

½ cup raisins, cranberries or blueberries

Baked Oatmeal Recipe:


Preheat oven to 350 degrees Fahrenheit and spray 9 by 9 pan with non stick spray.

In a large mixing bowl mix together the oatmeal, brown sugar, baking powder and spices. In another mixing bowl combine the applesauce, vanilla and eggs. Then add the raisins or berries of your choice. Slowly add the dry ingredients to the wet ingredients mixing thoroughly with a wooden spoon.

Pour mixture into baking pan and bake at 350 degrees Fahrenheit for 20 to 30 minutes. Remove from oven and serve as is or with low fat milk.

Notes: Slight variations to this Recipe can be made to lower the sugar count or provide a slightly different taste. For example you can substitute the brown sugar for a brown sugar substitute. You also add finely chopped nuts in place of the fruit.

One great way of serving this dish is to bake it with the nuts inside and then top with fresh strawberries or raspberries.
