One of the best Anniversary Cake Ideas is to have pumpkin pineapple cakes hearts decorating the serving board with real or silk flowers that were part of your wedding.

If you prefer instead of flowers or as an additional decoration you can place photos of the happy couple in clear washed plastic frames on or near the cakes. On one cake place a picture from the wedding on the other place a picture of how the couple looks now. Guests and the guests of honor will love these cakes.

Making The Actual Cakes

To start with you will either need one large or two smaller heart shaped cake pans. Double this recipe if you are making two cakes.


1 box of organic yellow cake mix.

1 teaspoon cinnamon

½ teaspoon ginger

½ teaspoons nutmeg

1/3 cup unsweetened crushed pineapple drained

1-15 ounce can of pumpkin

1 egg and 2 egg whites

For frosting:

½ cup reduced fat cream cheese (softened)

2 ½ cups powdered sugar sifted

1 teaspoon vanilla extract


Preheat oven to 350 degrees Fahrenheit

Spray cake pan(s) with non stick cooking spray

In a large mixing bowl put in yellow cake mix, cinnamon, ginger, and nutmeg.

Add the egg and egg white, pineapple, and pumpkin.

Beat by hand or using a mixer on low until smooth.

Pour into cake pan(s) and bake at 350 degrees Fahrenheit for 30 to 35 minutes or until a tooth pick inserted into the center comes out clean.

Let cool for 3 to 5 minutes and then remove cakes from pan and cool on a wire rack. While cake is cooling prepare serving board by covering it with freezer paper.

The Frosting:

Place softened cream cheese, powdered sugar, and vanilla in mixing bowl and using an electric mixer beat on medium speed until frosting is well blended and creamy.

Move cakes to prepared cake board, frost and decorate.
